- 1 lb. chicken, cut into bite-sized pieces
- 2 onions, thinly sliced
- 1/2 cup plain yogurt
- 1 tablespoon ginger paste
- 1 tablespoon garlic paste
- 2 green chilies, chopped
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala powder
- 1/4 cup mint leaves, chopped
- 1/4 cup cilantro leaves, chopped
- 2 tablespoons ghee
- Salt to taste
- Water as needed
For the rice:
- Wash the rice thoroughly and soak it in water for at least 30 minutes.
- In a large pot, bring 8-10 cups of water to a boil.
- Add the soaked rice to the boiling water and cook for 5-6 minutes or until it's about 80% cooked.
- Drain the water and set aside the rice.
For the chicken:
- In a bowl, mix the chicken pieces with the yogurt, ginger paste, garlic paste, green chilies, turmeric powder, red chili powder, cumin powder, coriander powder, and garam masala powder.
- In a large pan, heat the ghee and fry the onions until they are golden brown.
- Add the marinated chicken to the pan and cook for 10-12 minutes or until the chicken is cooked through.
- Add the chopped mint leaves and cilantro leaves and mix well.
To assemble the biryani:
- In a large pot or oven-safe dish, spread a layer of rice.
- Add a layer of the cooked chicken on top of the rice.
- Repeat the layers of rice and chicken until all the rice and chicken is used up.
- Cover the pot or dish with a tight-fitting lid or foil.
- Place the pot or dish in a preheated oven at 350°F for 20-25 minutes.
- Remove from the oven and let it sit for 5-10 minutes before serving.
