Make chicken soup
Ingredients:
- 1 whole chicken (or chicken parts such as legs, thighs, and/or breasts)
- 1 onion, diced
- 2-3 carrots, sliced
- 2-3 celery stalks, sliced
- 4-6 cups of water or chicken broth
- Salt and pepper, to taste
- Optional: herbs and spices such as bay leaves, thyme, rosemary, garlic, or ginger.
Instructions:
- In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add the chicken to the pot and pour enough water or chicken broth to cover the chicken. Bring the mixture to a boil, then reduce the heat to a simmer.
- Add the sliced carrots and celery to the pot, along with any herbs or spices you're using. Season with salt and pepper to taste.
- Let the soup simmer for 1-2 hours, until the chicken is fully cooked and the vegetables are tender.
- Once the soup is done, remove chicken from the pot and crumble the meat using two forks. Discard the bones and skin.
- Return the shredded chicken to the pot and stir to combine.
- Taste the soup and adjust the seasoning as needed.
- Serve hot and enjoy!
