Indian Chicken Curry
Ingredients:
- 1kg chicken, cut into bite-sized pieces
- 4 tablespoons mustard oil
- 4 large onion, chopped
- 2 tablespoon ginger paste
- 2 tablespoon garlic paste
- 2 medium tomatoes, chopped (Optional)
- 2 teaspoon cumin powder
- 2 teaspoon coriander powder
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala powder
- 1/2 teaspoon salt (or to taste)
- 1/4 cup chopped fresh coriander leaves, for garnish
- 1 cup water
Process:
- Heat oil in a large skillet or Dutch oven over medium heat.
- Add the onions and sauté until soft and translucent.
- Add the ginger and garlic paste and sauté for another minute.
- Add the chicken pieces to the skillet and cook until browned on all sides.
- Add the chopped tomatoes, cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for a few minutes until the tomatoes are softened.
- Pour in the water and bring the mixture to a boil. Reduce the heat to low and simmer, covered, for 20-25 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened.
- Add the garam masala powder and stir to combine.
- Garnish with chopped fresh coriander leaves and serve hot with rice or naan bread.
